Sauteed Spinach, Eggs, Onions and Babykixx Mango

Think out of the box by trying a Babykixx Mango on a healthy lunch packed with leafy greens and eggs.  The exotic sweetness of a mango pack is a perfect compliment to healthy low calorie but energy packed lunch of spinach, eggs and sautéed onions.

Spinach, eggs, onions and mango

Ingredients:

3 cups raw spinach

1/4 onion sliced

1 egg

2 tablespoons of olive oil

Salt and Pepper to taste

1 1.6 oz Babykixx mango pouch

Sauteed the onions in the oil until soft, add spinach and stir until dark green and soft, move spinach and onions to the side and fry egg in pan, scramble the egg and then mix with the spinach and onions.

Place egg, spinach and onions in a bowl.  Pour Babykixx mango pouch on top of the spinach mixture and enjoy!

Both fresh and cooked spinach contain about the same amount of macronutrients in a 100-gram serving (roughly 3 1/3 cups raw or 1/2 cup cooked spinach). Both servings are about 23 calories, 3.8 g of carbohydrates, 3 g of protein, 0.3 g of fat, and a whopping 2.4 g of fiber, which is 10 percent of the daily value. 

One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids. The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin.
